Simple and easy way to make homemade pot pie!
1 1/2 cup chicken broth
1 cup chicken (cut or shredded)
1/4 cup carrots (cut or shredded) – cooked and drained of water
1/4 cup celery – cooked and drained of water
1/4 cup diced white onion – cooked and drained of water
2 pie crusts (like Pillsbury)
salt and pepper to taste
Cook chicken, cut and set aside. Boil carrots, celery and onion for about 15 minutes in water. Drain. Bring milk and broth to boil, turn to simmer, stirring often until starts to thicken. Remove from heat.
Fill greased pie tins with pie crust. Pouring equal amounts of mixture into all three tins, then pour broth and milk mixture over top. Bake at 375 for about 45 mins-60 mins, depending on oven. Crust will be golden brown.
