Homemade Fast Food

French Fries 022On my continued quest for healthier food choices (please ignore the XXL bag of M&M’s from Costco in the pantry) I still crave fast food!

So how do does one go about enjoying fast food without it actually getting fast food? Homemade of course.

Chicken nuggets and french fries were my latest venture. It’s simple and yummy.

Ingredients for chicken nuggets:

2 chicken breasts

1 cup bread crumbs

1 egg white

½ cup water

½ teaspoon salt

½ teaspoon garlic seasoning

1 teaspoon pepper

Cut chicken into small bite size pieces. Soak in wash (egg white and water) moving the chicken around, covering all sides.

Roll in bread crumb mix (bread crumbs, salt, pepper, garlic). Place chicken on cookie sheet. Bake at 375 for 20 minutes (oven temperatures very, be sure to check to make sure cooked thoroughly), flipping halfway through.

Ingredients for French fries:

1 large potato

2 tablespoons olive oil

Salt (to taste)

Pepper (to taste)

Non-stick spray

French Fries 015Wash potato then cut into strips, coat in olive oil, pepper and salt. Coat cookie sheet with non-stick spray. Bake at 375 for 20 minutes. Place under broiler for about 3-5 minutes depending on desired crispness.

Enjoy with your favorite ketchup or ranch dip.
